I first tried the flavour combination of gingerbread and lemon in the form of an ice cream sandwich, with lemon gelato between two chewy gingerbread molasses cookies. I was pretty hesitant to try it at first, thinking the mix sounded less than appetizing. However, one bite and I was a total convert. In fact, the combination of gingerbread and lemon is pure genius. Seriously, after you try it, you may not think that there are two better flavours to have ever been paired together and compliment each other so well.
Nothing screams the festive season like the smell of gingerbread wafting through the house. I personally prefer big, soft, chewy gingerbread cookies to their hard, thin, funny-shaped counterparts. I used this recipe here, and then topped the cooled cookie with the best cream cheese icing, mixed with 1 tbsp lemon juice and 1 tsp lemon zest.
