Coconut Lime Cupcakes

It’s good to have a go-to recipe that will never fail you no matter what the occasion may be. For me, these cupcakes are it. They are as moist as you can get in a cake, super dense, delectably sweet, but lightened with the addition of shredded coconut and lime + lemon juice. Style at Home’s recipe, although time consuming, is a favourite baking recipe of mine. With Mother’s Day around the corner, these would be the perfect accompaniment to a sophisticated lunch, a rustic dinner, or alongside a meaningful gift. Although I won’t be with my Mom this year for the holiday, I’m glad I made these just a couple weeks ago so she had a chance to enjoy them!

The perfect icing for these is the lime buttercream, which I’ve previously made for all kinds of things here.
