Chia seed pudding is culinary genius.
If you’re not familiar with this superfood, remember back to those popular plants that would sprout in the shape of an animal known as chia pets?
Yeah, those chia seeds.
The once common kitschy house plant has been reborn into one of the coolest health foods of the moment. Luckily for me, I’ve been on this bandwagon even before it mainstream, and have become quite the chia seed expert.
After living without a blender for the past couple years, I was yearning for smoothies. Especially come the warmer temps, we all crave cooler and simpler meals. Enter chia seed puddings, a super easy alternative to smoothies and acai bowls.
What makes these little seeds unique is, that upon adding a liquid to them, they multiply in size by soaking it all up, producing a gel-like consistency. The final pudding-like product is a great base for adding flavours and textures. The possibilities are endless. After experimenting with chia seed puddings for years, I’ve perfected a few recipes that I turn to time and time again, and would convert any first-timer into a chia seed fan. To add to the impressive list of chia seed health benefits, and to make it a more complete meal, I always add protein powders to mine.
